Trout Recipes
A good fishing trip does not have to end at the boat ramp. This recipe collection is built around simple ways to turn fresh trout into something worth sharing with family and friends. We are starting with one of our favorites: a creamy smoked trout dip with fresh dill and lemon.

Busch Mountain smoking method: Smoke the trout at 225°F using cherry or apple wood. Keep the seasoning simple so the fish and smoke stay out front. Smoke until the trout is cooked through and flakes easily, then let it cool before making the dip.
Smoked Trout Dip
Ingredients
- 8 oz smoked trout, cooled, skin and bones removed, then flaked
- 8 oz cream cheese, softened
- 3 tablespoons mayonnaise
- 2 tablespoons fresh dill, finely chopped
- 2 tablespoons green onion or chives, finely chopped
- 1 tablespoon fresh lemon juice
- 1 teaspoon fresh lemon zest
- 1 teaspoon Dijon mustard
- Freshly ground black pepper, to taste
- Optional: a few dashes of hot sauce
For serving
Crackers, toasted baguette slices, kettle chips, celery, cucumber, or fresh vegetables.
How to Make It
- Smoke the trout. Set the smoker to 225°F and use cherry or apple wood. Smoke the trout until it is cooked through and flakes easily. Let it cool completely.
- Prep the fish. Remove the skin and any bones, then break the trout into small flakes. Keep a few larger pieces for texture.
- Make the creamy base. Stir the softened cream cheese and mayonnaise together until smooth.
- Add the flavor. Fold in the dill, green onion or chives, lemon juice, lemon zest, Dijon, black pepper, and hot sauce if using.
- Fold in the trout. Add the smoked trout and mix gently. Do not overwork it; leaving some pieces of trout intact gives the dip better texture.
- Chill. Cover and refrigerate for 30–60 minutes so the smoke, dill, and lemon come together.
- Serve. Top with a little extra dill, cracked pepper, or lemon zest and serve cold with crackers or vegetables.
Guide tip: If you want it looser, add another spoonful of mayonnaise. If you want the smoke flavor stronger, increase the smoked trout instead of adding liquid smoke.
